• 1 cup (225 g) softened butter
• 3 cups (360 g) powdered sugar
• ½ cup (50 g) cocoa powder
• 3–4 tablespoons cherry cola
• 1 teaspoon vanilla extract
• A pinch of salt
• Optional: maraschino cherries or fresh cherries
⸻
Instructions
1. Prepare the Cake Pans
• Preheat the oven to 175°C.
• Grease two 20–23 cm round cake pans and line the bottoms with parchment paper.
⸻
2. Prepare the Dry Mix
In a large bowl:
• Flour
• Sugar
• Cocoa
• Baking powder
• Baking soda
• Salt
Mix the ingredients. Obtain a smooth and homogeneous powder mixture.
⸻
3. Prepare the Wet Mixture
In another bowl, lightly beat the eggs. Then:
• Cherry cola
• Melted butter
• Vegetable oil
• Vanilla
and mix.
⸻
4. Combine the Dough
• Pour the wet mixture over the dry mixture.
• Mix with a mixer on low-medium speed until you get a silky dough.
• Finally, add hot coffee or hot water.
• The dough will be quite runny at this stage, which is normal.
⸻
5. Baking
• Divide the dough evenly between two pans.
• Bake for 28–32 minutes.
• The cake is done when it springs back when lightly pressed.
• Let it rest in the pan for 10 minutes, then transfer to a wire rack to cool completely.
⸻
6. Cherry Cola Chocolate Cream
1. Beat the butter for 2–3 minutes until creamy.
2. Sift in the powdered sugar and cocoa powder, adding them gradually.
3. Add the cherry cola 1 tablespoon at a time to adjust the consistency.
4. Add the vanilla and salt and beat until smooth.
• If the consistency is too thick, you can add a little more cola.
⸻
7. Assemble the Cake
1. Once the cake layers are completely cooled:
• Spread a generous amount of cream on the first layer.
• Place the second layer on top.
2. Cover the entire cake with cream.
3. You can create a wavy pattern on top using the chocolate-cola cream.
4. Garnish with cherries.
