Chicken Alfredo Cottage Cheese Pizza

Crispy, creamy, high protein, and low carb.

Ingredients

• cottage cheese – almond flour – Parmesan – egg – tiny pinch xanthan gum – salt – oregano – garlic powder

• butter – heavy cream – Parmesan – thyme – salt

• cooked chicken breast – shredded mozzarella – chopped spinach – chopped red onion – parsley

Steps

1. Blend cottage cheese with egg until smooth.

2. Mix with almond flour, Parmesan, xanthan gum, salt, oregano, and garlic powder. Chill dough.

3. Press very thin into a 10–11 inch round on parchment; dock with a fork. Par bake at 400°F for 12–15 minutes until lightly golden.

4. Cook chicken; set aside. In the same pan make Alfredo with butter, cream, Parmesan, thyme, and salt until thick.

5. Spread a thin layer of Alfredo on crust. Add mozzarella, chicken, onion, and a little spinach.

6. Bake 8–10 minutes until bubbly; broil 1–2 minutes to crisp. Rest 5 minutes. Garnish with parsley.

Tip

• Keep sauce and toppings light so the thin crust stays crisp.
