Chocolate-Dipped Strawberry Mousse Cake

Ingredients
Cake Layer:
• 1 box chocolate or vanilla cake mix (plus ingredients listed on the box)
• Or your favorite simple homemade cake
Strawberry Mousse:
• 2 cups fresh or frozen strawberries
• 1/2 cup sugar
• 1 tbsp lemon juice
• 1 cup heavy cream
• 1 packet unflavored gelatin
• 2 tbsp cold water
Chocolate Topping:
• 1 cup chocolate chips or chopped chocolate
• 2 tbsp butter or cream
Garnish:
• Fresh strawberries, whole or halved
• Optional: drizzle of extra melted chocolate

Instructions
1. Bake Cake: Prepare and bake the cake layer in a round pan according to the package or recipe instructions. Let it cool completely. Trim the top if needed for a level surface.
2. Make Strawberry Mousse:
• Cook strawberries, sugar, and lemon juice until softened. Blend until smooth and cool slightly.
• Bloom gelatin in cold water, then warm gently until melted. Stir into the strawberry puree.
• Whip heavy cream until soft peaks form. Fold into the strawberry mixture until light and airy.
3. Assemble Cake: Pour the mousse over the cooled cake layer. Chill for at least 3 hours, until firm.
4. Add Chocolate Topping: Melt chocolate with butter or cream until smooth. Let cool slightly, then pour over the chilled mousse and spread gently.
5. Garnish: Arrange fresh strawberries on top. Dip a few in chocolate for an elegant finish.
6. Final Chill: Chill another 30 minutes before slicing and serving
