Ingredients
For the Cake Layers
• 3 cups (375 g) all-purpose flour
• ½ cup (170 g) honey
• ¾ cup (150 g) granulated sugar
• ½ cup (115 g) butter
• 2 large eggs
• 1 ½ teaspoons baking powder
For the Cream Filling
• 2 ½ cups (600 g) sour cream (or cream mixed with strained yogurt)
• 1 cup (240 ml) heavy cream
• ¾ cup (90 g) powdered sugar
• 1 teaspoon vanilla extract

Instructions
1. Prepare the Dough
1. Set up a double boiler. Add butter, honey, and sugar to the heat-resistant bowl on top.
2. Stir until the mixture melts and turns into a golden syrup.
3. Add the eggs and whisk continuously to prevent curdling.
4. Then add the baking powder – the mixture will bubble and turn caramel-colored.
5. Remove from heat, slowly add the flour, and stir with a spatula to form a soft, sticky dough.
2. Shape and Bake the Layers
1. Divide the dough into 7–8 equal pieces.
2. Roll each piece into a thin 20 cm diameter circle on parchment paper.
3. Bake in a preheated 175°C oven for 5–6 minutes, until the edges are golden brown.
4. Let the layers cool. While cooling, you can stack them and place a light tray on top to keep them flat.
3. Prepare the Cream
1. Whip the cream until soft peaks form.
2. In a separate bowl, mix the sour cream, powdered sugar, and vanilla.
3. Combine the two mixtures to achieve a light, silky texture.
4. Assemble the Cake
1. Place the first layer on a serving plate and spread a generous layer of cream on top.
2. Stack the layers, adding cream between each one.
3. Spread the remaining cream on the top and sides.
4. Crumble one of the baked layers and use it to cover the top and sides of the cake.
5. Let it rest and serve.
Leave the cake in the refrigerator overnight so that the layers soften and blend with the cream.
